Chuck Roast with Dried Cherries

recipe-roastWhen you buy a whole or half of a cow, you get several roasts. I love chuck roasts as they are so versatile for cooking anything from traditional pot roast to spicy beef tacos. And again, the oven really does all the heavy lifting here. I substituted dried cranberries for the cherries but use whatever you like. I know cinnamon may seem a little strange but trust me it makes meat delish! Everyone will know there is a familiar flavor but usually cannot identify it because really who uses cinnamon on meat? It is usually reserved for toast slathered in butter-yum-yum!

I serve this with what my kids refer to as “mama noodles” AKA – extra wide egg noodles with butter and parmesan cheese salted to perfection. I lived on them in my twenties when I worked a Microsoft and was too tired each night to cook a full meal. I still love them!
